Take a stick of butter and let it get to room temperature.
When it's soft enough to mush around with a spoon, mix in some sweet additions: maple syrup, honey, marmalade, cinnamon, candied ginger, agave nectar...whatever makes you giddy.
I went with a comforting mix of honey and cinnamon.
It took every teaspoon of my being to not scoop this out of the bowl and onto a cake cone.
Refrigerate until firm or until ready to use on Friday.
Now scoot. You'll miss your bus. Or the next episode of Man vs Food.

Looks awesome. I struggle with pancakes. Mostly cause I don't have a griddle and am always making them in a skillet.. which is doable but not really easy. I have no reason for not having a griddle. Or a cast-iron skillet, either. These things must be remedied.

ReplyDeleteAnd yes, I went out and got one during that time period. I called out today because there's no way in hell I was going to struggle through a metro commute (and my bus wasn't even running today). Plus I'm making steaks for V-day dinner and needed one this weekend anyway.
